My fave recipe for chicken breasts is one I found online forever ago, and cannot find again!! It's really yummy though, and versitile, so I'll give you my latest version of it!
You will need:
4 boneless skinless chicken breasts, thawed
cheeses of your choice
fresh mushrooms (I used shitake.)
Preheat your oven to 350 degrees.
Okay. First, you will get your chicken breasts out of their packages, and cut a little slit in the breasts to stuff things into. (Mutilating breasts... scawy!!)
Chop half the mushrooms up as finely as you would like (in Jana-nese: chop til bored.) Put them in a bowl along with whatever shredded cheeses you would like. Last time, I used some cheap shredded cheese from my freezer, and then shreded some fresh parmesan and ummm... maybe romano? cheeses too. Mix them up good, maybe tossing in some salt, pepper, garlic... whatever floats your boat... (in Jana-nese: season til bored or it smells yummy) Stuff this mixture into the slits you made while mutilating the breasts. (Hmm... does this count as breast augmentation surgery?) Toss some salt/pepper/random other yummy spices onto the top of the now ginormous breasts, and bake for 30 minutes. (in Jana-nese: bake until bored or until the kitchen smells yummy.)

My favourite chicken recipe is when I put some chicken pieces in my crockpot to cook while I"m at work and when I get home I take all the meat off the bones, throw it all into a frypan with some frozen veges, a can of coconut cream and a can of peanut satay sauce or butter chicken sauce and mix it all together until cooked. Then I cook some rice up and with it all together it's one filling yummy meal!
That is so simple, it's genius! At what temp Jana? I'm thinking 350F?
This week I'm going to be making my Buffalo Chicken although this recipe isn't exactly the same as the one I make. I don't do the egg thing, I just coat the chicken in flour with some chipotle and paprika and s&p and lightly fry it up, I never deep fry! Then I put it in the sauce. It's so fast and is really yummy. I also go lighter on the butter in the sauce to make it healthier.
I have two:
First one is homemade Chicken Pot Pie and the second is just marinating chicken breast in Italian dressing for a day and then grilling or baking. Both yummy.
