Skillet Meals?

Today I gave my hubby two options for supper: A.) Smoked sausage, fried eggs, and french fries. B.) A skillet meal made of sausage, eggs, and tater tots. (Yes, I do know that both of these meals are a tad unhealthy... and have significantly low amounts of fruits and veggies. We're working on that.) He chose option B and I happily went to work... I baked tater tots until crispy for the bottom layer, then scrambled eggs for the middle layer, and cooked slices of smoked sausage for the top layer. I covered it all in a little cheese... James not only ate ALL of his food, but over half of mine!!


He told me that he loved the skillet meals I make, and not just because he's a good husband and that's what he's supposed to say lol!! I only used about 2/3 of the smoked sausage, so guess what I did with the rest? Another skillet for him for his breakfast! This time I took the smoked sausage and one can of mushrooms, and diced them up. I put them in the skillet along with a dozen eggs, and 7 drops of habenero hot sauce. I scrambled the mixture and turned on the heat... scrambled them just like you scramble regular eggs. When they were done, I tossed cheese on the top, and... VOILA!




A skillet meal! This is the third skillet meal I've made for him, and we both absolutely love them. My question for today is:

Have you tried making a skillet meal? Which combos have you liked?

TWELVE eggs!!!!!!!!!!!! Hope you guys have no history of cholesterol lol. Sounds delish though ;)

Mike and I have a skillet meal for breakfast on the weekends. I use frozen potatoes with onions and peppers, some kind of sausage, 3-4 eggs, and cheese. I do keep the eggs light and heavier on the potatoes/veggies so it is a bit healthier.

A trick Mike taught me - when you whip your eggs up before pouring them in the skillet - add a dash of worcestershire sauce. Gives them a yummy flavor! I also like adding a bit of a hot sauce. Tiger Sauce is my favorite!

I recreated it again a couple nights later adding in organic italian sausage. Maybe even yummier!

We just call these "scrambled eggs". lol Mushrooms are a favorite in our house. If he makes this for himself, he uses SPAM. Blech.

Hehehe. We call these type of skillet meals "heart attack on a platter". ;-)

Most of our skillet meals nowadays basically consist of some kind of stir-fry---chicken, veggies, etc.

But I still dream of bacon! LOL

Genius and so yummy! I don't make a lot of skillet meals but I did do Rachael Ray's Buffalo Chicken Chili last night and it rocked. You do have to put that in the oven though to get the cheese to melt. I highly recommend it.

Yikes!! Talk about a huge meal!



You will need:

Tortillas
1 or 2 lbs of any kind of steak that you like.
1 or 2 bell peppers or more
2 or 4 tomatoes, I like tomatillos
1 small chopped onion
Mushrooms, as much as you want. I use a whole container.

Chop up all of the veggies, and meat (bite-size)

In a skillet cook the meat until it is almost done. Add a teeny bit of water and add all of your veggies. Cook until veggies are tender but not soggy. Add salt and pepper.

Heat up your tortillas and enjoy.

You will not be able to roll them up as burritos, but if you don't mind being messy, scoop up the food with the tortilla.
